PSU Smallwood Food Pantry newsletter DECEMBER 5TH

November was an exceptional display of community here at the PSU Smallwood Food Pantry. When SNAP benefits were withheld from hundreds of thousands of Oregonians across the state, the people of Portland stepped up to make sure our students were nourished. Volunteer hours and requests increased, we saw thousands of pounds of food donated and over $40,000 dollars in donations came to our PSU Foundation account. As a team, we want to say thank you to every single person who donated their time, their money or food. I cannot imagine what the last month would look like without this support.

I know it’s an unpopular opinion to love when it gets dark early, but I just love this time of the year. I think it is so cozy to come home, make something for dinner and sit and enjoy the soft glow of holiday lights. I love going to the
free events that the city puts on and gathering together with folks whose paths I likely wouldn’t cross otherwise. The holidays remind us that community is everywhere. We gather together to celebrate, to sing and to eat. I hope that during this time, you are able to relax and enjoy time with your favorite people.

As we welcome in December, please remember that when class is out of session, the pantry is closed. Come visit the pantry to stock up before winter break. We will close on December 15, 2025 through January 7, 2026. I also encourage you to utilize
Oregon Food Bank’s Free Food Finder to find local pantries that can help while we are closed. Thank you all for your continued support!

Wishing you and yours a very happy and cozy holiday season.

Beets

Beets are a personal favorite for adding vibrant color and deep, earthy flavor to a rainy season menu. With a mild sweetness that's incredibly versatile, they're perfect for any dish, sweet or savory. Plus, for my anemic baddies, they are full of easily absorbed iron.
Whether you're a long-term lover or new to the game, here are some recipes:

25 Beet Recipes: These recipes give a full view of what beets can do. Smoothies, soups, roasted, salads...
Microwave Beets: This recipe is perfect is you don't have a stove, or frankly, if you don't have the time (I know I don't). Give it a try and let us know what you think!

Potatoes

Whether you want something crispy, creamy, or crunchy, potatoes are the way to go. They're one of the most popular vegetables worldwide and for good reason. They're hearty, nutrient dense, super filling, and so delicious.
I'll let the potatoes speak for themselves with these recipes:

Microwave Cheesy Potatoes: Here's another microwave recipe for you to try this finals week! Easy, delicious, filling.
Potato Recipes: These recipes come straight from the source (Idaho), and you can filter by cooking method!

slices of bread with melty butter on top.

Malted Barley Flour

This flour can be used in a variety of ways. Try it as a replacement for all-purpose flour in baking recipes (it will make your goodies rise!), thicken soups and sauces, or add to smoothies for extra nutrition.

To thicken: Make a roux with 1:1 barley flour and water. Incorporate into your dish while stirring constantly to combine well.

Barley Flour Chocolate Chip Cookies: These soft and gooey cookies are exactly what I want after a cold rainy day.

Quick Barley Bread: Don't worry!! This bread has no yeast, no rise time, and only uses a few ingredients. There are also recipe variations listed so you can make your loaf garlic and herb, honey nut, or cranberry orange.
